Lemons never go to waste in my home. I use the juice and peel in recipes, and the leftover rind is used with baking soda to scrub out the kitchen sink. All I can say is that I love taste and smell of lemons! For my latest recipe,
lemon blueberry muffins, I had one small lemon left in the fridge, and I had already used half the zest from it for cooking fish. When I grated the remaining amount of yellow peel into my muffin mix bowl, I was worried that I didn't have enough peel to make a difference in the taste of the blueberry muffins. I was wrong. The flavor was absolutely perfect and the lemon gave the blueberry muffins the extra oomph they needed.

Picking blueberries is one of my favorite memories of mom's old farm. I'd get up in the morning and, instead of eating breakfast in the kitchen, I'd go straight outside and start eating blueberries right off the bush. When I was done, my mom would send me out with a bowl to pick more blueberries for the muffins we were going to bake for company in the afternoon. This
recipe for mini blueberry muffins is a classic, tried and true, blueberry muffin recipe. It's easy to make, even for kids and beginners, and the result is 24 mini, bite-sized muffins that everyone will love.

There's no denying the summertime heat. It's too hot to kick on the stove for large dinners and, yet, by the time the sun goes down, the kids and I are starving for something hot to eat. With everything coming into season, we've been making delicious, homemade pizzas at night. We make the
pan pizza dough and press the dough into the 3 medium-size skillets we bought at a yard sale. We then top each pizza with our favorite cheeses and veggies. Everyone's happy and everyone has a full belly.

The local paper keeps telling me about at-home vacations and how to save money this summer by staying home, picnicking, and even camping in the backyard. This is nothing new to my family. Picnics and camping out back are all part of the summer fun.
Rolled cinnamon bread is the latest bread I served to my outdoor picnickers. It's a sweet, old-fashion recipe that the neighborhood kids just loved, and it goes perfect with a tall, cold glass of milk.
