
Meals made from leftover bread are a staple in my family. There's gravy bread, buttery bread stuffing, and a bread, egg, asparagus meal that has traveled through my family through the generations. When I called my grandmother about this
bread, egg, asparagus meal she had no name for it but told how her mother-in-law taught it to her decades ago. It has a Pennsylvania Dutch origin and may have developed out the the Great Depression. When I asked my father about this meal, he christened it "Beats Me," which is what my kids and I now call this well-loved dish.
