For some people, rye bread comes off as too strong. It's a bread that you have to grow up liking or you have to learn to like it. With this in mind, I played around in the kitchen all Wednesday morning and came up with my latest recipe: banana rye yeast bread. There is only 1 cup of rye flour in this recipe and the mashed banana overpowers the flavor of the rye. The coloring is slightly darker than white bread and resembles a light wheat bread in look and texture. My recipe for banana rye yeast bread is a beautiful and delicious breakfast bread that can be served warm or cold, and it can be toasted and served with jam or made into a knee-buckling french toast.
