Lemon Blueberry Muffins

Lemons never go to waste in my home. I use the juice and peel in recipes, and the leftover rind is used with baking soda to scrub out the kitchen sink. All I can say is that I love taste and smell of lemons! For my latest recipe, lemon blueberry muffins, I had one small lemon left in the fridge, and I had already used half the zest from it for cooking fish. When I grated the remaining amount of yellow peel into my muffin mix bowl, I was worried that I didn't have enough peel to make a difference in the taste of the blueberry muffins. I was wrong. The flavor was absolutely perfect and the lemon gave the blueberry muffins the extra oomph they needed.
