Plain Muffins

The weather has been super hot here in Pennsylvania. Topped with thunderstorms and power outages, and I almost lost interest in trying to bake this season. Thank goodness for easy muffin recipes. Last night, I decided to defy the hot weather by making a roast with potatoes and carrots. I also made plain muffins to serve with the roast, and the kids and I sat down, AC blowing full blast, and had a feast. It's these simple things that make life so wonderful.
