Garlic Dill Bread

This is one of the recipes I invented using leftover cream cheese and cottage cheese. The cheeses in the bread make the loaf soft and chewy. The dill adds a unique, lightly herbal flavor so that this bread is a perfect go-along for your favorite pasta or fish dinner. Recipe for garlic dill bread makes one loaf.

Prep Time: 2 hours

Cook Time: 35 minutes

Ingredients:

  • 1 tsp dill seeds
  • 1 tbsp cream cheese
  • 1/2 cup cottage cheese
  • 1 tbsp sugar
  • 1 tsp salt
  • 3/4 cup warm water
  • 2 tsp active dry yeast
  • 1/2 tsp garlic powder
  • 1 tbsp butter, soft
  • 2-1/4 cups all-purpose flour, about

Preparation:

  1. In bowl, mix together dill, cream cheese, cottage cheese, sugar, and salt.

  2. Add warm water and yeast and stir until yeast is dissolved.

  3. Mix in garlic powder, butter, and enough flour to make a stiff dough.

  4. Turn dough out onto floured board and knead for 8 minutes. If dough is too sticky, knead in more flour, a tablespoon at a time.

  5. Place dough in greased bowl. Flip dough over so that top is lightly greased.

  6. Cover and let dough rise in warm place for about an hour or until double in size.

  7. Punch down dough. Turn out on lightly floured board and knead dough briefly.

  8. Shape dough into oval loaf.

  9. Grease baking sheet. Sprinkle sheet with cornmeal, optional.

  10. Place loaf on baking sheet, cover, and let rise for about 45 minutes or until double in size.

  11. Bake at 375 degrees F for 35 minutes or until bread sounds hollow when tapped on.

  12. Remove from oven and let loaf cool on rack.

  13. Loaf can be wrapped in plastic and frozen for later.
