Cinnamon Dessert Bread With Icing

This cinnamon bread topped with a simple vanilla icing will satisfy everyone’s sweet tooth. This recipe yields one yeast loaf that is easy to bake. It's perfect to enjoy over coffee or as a dessert on a cool autumn or winter day.

You get the flavor of a cinnamon roll without the work of making and baking the rolls. Raisins are included, but you can leave them out or substitute other dried fruit such as currants or dried cranberries. As well, you could add some chopped nuts.

Ingredients

For the Bread:

  • 1/2 cup milk

  • 1/4 cup water, warm

  • 1 tablespoon unsalted butter, melted

  • 1 tablespoon sugar

  • 2 teaspoons active dry yeast

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/3 cup raisins

  • 1 1/2 cups bread flour

For the Icing:

  • 3/4 cup confectioners' sugar

  • 1 tablespoon milk

  • 1 tablespoon unsalted butter, melted

  • 1/3 teaspoon pure vanilla extract

Steps to Make It

  1. Gather the ingredients.

  2. In a medium bowl, stir together the milk, water, and 1 tablespoon of butter. Add sugar, yeast, cinnamon, and salt. Stir until dissolved. Add raisins, if desired.

  3. Mix in the bread flour, a half cup at a time, to form the dough.

  4. Turn the dough out onto a floured board and knead it for about 5 minutes. If the dough is too sticky, add more flour a tablespoon at a time.

  5. Grease a medium bowl. Put the dough into the bowl and turn it over so that the dough is greased on the top. Cover and let it rise in warm place for about 45 minutes or until double in size.

  6. Punch down the dough by making a fist with your hand and pushing it firmy into the center of the dough. Then fold the edges of the dough to the center, forming the deflated dough into a ball.

  7. Turn out the dough onto floured board and knead it for about 3 minutes. Shape the dough into a loaf.

  8. Grease a loaf pan. Put the loaf into the pan, cover with a clean cloth, and allow it to rise for about 30 minutes or until double in size. While bread is rising, preheat oven to 350 F.

  9. Bake for 30 minutes or until golden brown.

  10. Remove the loaf from pan and let it cool to warm on a rack or clean cloth.

  11. In a medium bowl, make the icing by mixing together the confectioners' sugar, milk, melted butter, and vanilla extract until smooth.

  12. Spread the icing over the cooled bread.

  13. Serve and enjoy!

Tips

  • Slice the bread to serve. Store it in an airtight container in the refrigerator.
  • Once you've mastered this loaf, you might want to try your hand at making cinnamon swirl bread. It takes a little more effort as you must roll out the dough and add butter and cinnamon, then roll up the dough before baking. You can use the same icing on cinnamon swirl bread to turn it into a dessert bread.
