Cranberry Banana Bread

Dried cranberries are all the rage in home baking and with good reason. They are sweet to the taste and their ruby redness is a happy, festive color. Cranberry banana bread recipe makes 2 delicious mini loaves, topped with a simple glaze, that are perfect for family dessert as well as gift giving.
Prep Time: 10 minutes
Cook Time: 1 hour
Ingredients:
  • 2 bananas, mashed
  • 2 eggs, beaten
  • 2 tbsp honey
  • 1/3 cup sugar
  • 3/4 cup dried cranberries
  • 2 cups all-purpose flour
  • 2-1/2 tsp baking powder
  • pinch of salt
  • 1/3 cup butter, chilled
  • .
  • 1/4 cup confectioner’s sugar
  • milk
Preparation:
  1. Grease two mini loaf pans.

  2. Preheat oven 350 degrees F.

  3. Mash bananas in large bowl.

  4. Stir in eggs, honey, sugar, and cranberries. Set bowl aside to work on dry ingredients.

  5. In separate bowl, mix dry ingredients: flour, baking powder, and salt.

  6. Chop butter into small pieces and add to flour mixture.

  7. Break butter into flour with fingers until flour is crumbly.

  8. Stir dry ingredients into banana mixture.

  9. Scrape batter into 2 mini loaf pans.

  10. Bake for 1 hour or until inserted knife comes out clean.

  11. Remove loaves from oven and turn out onto rack. Allow to cool.

  12. When cool, mix confectioner’s sugar with just enough milk to make a glaze. Drizzle glaze onto loaves and allow to set.
