Orange Walnut BreadElizabeth Yetter

Orange walnut bread is a delicious quick bread that can be baked as either a dessert or gift bread. The freshly grated orange peel gives this bread an incredible orange flavor that is hard to beat. The loaf also freezes nicely.

Yield: 1 loaf

Prep Time: 20 minutes

Cook Time: 55 minutes

Ingredients:

  • 1 medium orange
  • 2-1/4 cups all-purpose flour
  • 3/4 cups sugar
  • 2-1/4 tsp baking powder
  • 3/4 tsp salt
  • 1/4 tsp baking soda
  • 1 med. egg, lightly beaten
  • 2 Tbsp canola oil
  • 3/4 cup orange juice
  • 3/4 cup chopped walnuts

Preparation:

  1. Preheat oven 350 degrees F.

  2. Grate a medium size orange, making sure to only get the orange zest and not the white pith. When you have one tablespoon of orange peel grated, place the peel in a large bowl. Add flour, sugar, baking powder, salt, and baking soda. Mix well. Add egg, oil, and orange juice. Mix until flour is wet. Fold in walnuts.

  3. Scrape batter into a greased loaf pan, 8.5x4.5x2.5 inches. Bake for about 55 minutes or until inserted knife comes out clean. Turn out loaf onto rack and allow to cool completely.
