This is the easiest cornmeal waffle recipe you can make. There’s no pre-preparation involved with the cornmeal and the batter is prepared similarly to cornbread.

- 3/4 cup coarse yellow cornmeal
- 1/4 cup all-purpose flour, sifted
- 1 Tbsp sugar
- 2 tsp baking powder
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 egg, separated
- In medium bowl, mix together cornmeal, flour, sugar, and baking powder. In small bowl, mix together milk, butter, and egg yolk. In another small bowl, beat egg white until stiff. Begin heating waffle iron. Add wet, milk ingredients into dry ingredient and mix well. Fold in egg white. Bake in waffle iron according to your model’s instructions. Serve with butter and your favorite syrup.
