Johnnycakes are flat breads that are similar to pancakes. It’s believed that Johnnycakes were originally called journey cakes because settlers and circuit riders would make them as they traveled across the U.S. Serve these the same way as pancakes, with butter and maple syrup.

Yield: 4 to 5 johnnycakes

Prep Time: 05 minutes
Cook Time: 20 minutes
Ingredients:
  • 1 cup finely ground cornmeal
  • 1 Tbsp soft butter
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1 cup boiling water
  • 1/4 cup milk, cold or room temperature
  • Bacon drippings, lard, or shortening
Preparation:
  1. In small bowl, add cornmeal, butter, sugar, and salt. Pour boiling water over ingredients and stir until butter is melted. Stir in milk until the batter is slightly thicker than pancake batter. Use more milk if necessary.

  2. Heat bacon grease, lard, or shortening on griddle. Spoon batter onto hot fat and fry on each side until both sides are crisp. Serve hot with butter and maple syrup.
