Easy Lemon Butter

This easy to make lemon butter really gets the mouth juices flowing! The zangy taste of lemon tastes great on white breads and rolls, English muffins, and even fish.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 1/2 cup (1 stick) butter, softened
  • 1 tsp grated lemon peel
  • 1 tbsp lemon juice

Preparation:

  1. Cream butter in small bowl until it is fluffy.

  2. Grate a teaspoon of lemon rind and squeeze a tablespoon of lemon juice. Add to bowl of butter and whip until well blended.

  3. Keep butter covered in a crock dish or in a plastic container. Refrigerate when not in use.

I made this and it was good but needed more of something, so I experimented and came up with what I think is perfect for breads, vegs, and mainly fish. I took a stick of softened butter, a pinch of salt, 1Tbl honey and 1 tbl lemon zest only and beat it well. after beating, mix with a spatula to scrap sides and bottom and distribute the lemon zest well into the spread. Put into container with tight fitting top and refrigerate at least 24 hours before using. Its really great on fish and I have used it on baked sweet potato and carrots, broccoli and rice too.
