Soup Mix Meatloaf

This recipe is for a traditional meatloaf that is meant to feed a large family. Use the you’ve made to thicken the loaf, and the onion soup packet is all that is needed to flavor the loaf. Leftover meatloaf can be sliced for making sandwiches for lunch the next day.
Prep Time: 15 minutes
Cook Time: 1 hour
Ingredients:
  • 2 lbs. ground beef
  • 2-1/2 cups plain breadcrumbs
  • 3/4 cup ketchup
  • 1/2 cup warm water
  • 2 eggs
  • 1 package onion soup mix
  • 1/4 tsp salt
  • .
  • 1 can (6 oz.) tomato paste
Preparation:
  1. In large bowl, add ground beef, breadcrumbs, ketchup, water, eggs, soup mix, and salt. Mix well with hands.

  2. Put mixture into 2 quart casserole dish. Glaze top with tomato paste.

  3. Bake uncovered at 350 degrees F for 1 hour, or until juice runs clear and meat and cooked.

  4. Serve meatloaf as wedges.
