Muffins are so easy to make and they are terrific snacks. Orange pecan muffins can be served at breakfast or as a snack or dessert at lunch or dinner. I serve them warm with butter and orange marmalade.

Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 medium orange or 1 Tbsp grated peel
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 cup shortening
- 1 large egg, lightly beaten
- 1 cup milk
- 3/4 cup chopped pecans
Preparation:
- Preheat oven 400 degrees F. Grease 12-cup muffin pan.
- In medium bowl, add flour, sugar, the grated peel from 1 medium orange (avoid grating the white pith because it will make the muffins bitter), baking powder, and salt. Mix together. Cut in shortening so that the batter looks like fine crumbs. Stir in egg and milk. Fold in pecans.
- Scrape batter into 12 muffin cups. Bake at 400 degrees F for 20 minutes or until the tops feel firm when pressed on. Remove muffins from muffin cups and serve warm or cold.
