Whether you're getting ready to celebrate Thanksgiving or Christmas, carrot walnut bread is a beautiful gift bread you can make for the host. This is a very easy quick bread that can be mixed in minutes.

Yield: 1 loaf

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes


  • 3/4 cup brown sugar
  • 2 Tbsp shortening
  • 2-1/2 cups all-purpose flour
  • 2-1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 2 med. eggs, lightly beaten
  • 1 cup grated carrot, about 1 large carrot
  • 1/2 cup chopped walnuts


  1. Preheat oven 375 degrees F. Grease 9 X 5-inch loaf pan.

  2. In large bowl, cream brown sugar and shortening. Mix in flour, baking powder, baking soda, and salt. Add milk and eggs and stir until flour is wet. mix in grated carrot and walnuts. Scrape batter into greased loaf pan and bake at 375 degrees F for 1 hour or until inserted toothpick comes out clean. Remove from oven and let sit for 5 minutes before turning out. Let loaf cool on rack.

This bread turns out pretty plain and bland. No spices are used in the recipe which is something I'd definitely change if I tried it again. The batter is very stiff and the end result was rather dry though I didn't over bake it. Might be better with the addition of some spices and a cream cheese frosting but I doubt I go to that trouble for this recipe.
