Yield: 8 corn muffins

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

  • 3 Tbsp butter, melted
  • 3/4 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1-1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk
  • 2 Tbsp maple syrup
  • 1 large egg

  1. Preheat oven 425 degrees F. In small saucepan, melt butter over low heat. When butter is melted, remove saucepan from heat and let cool to warm. In medium bowl, mix together the dry ingredients: flour, cornmeal, baking powder, and salt.

  2. Prepare muffin tins by lining tins with 8 paper muffin cups or greasing the pan. Returning to the saucepan with melted butter, add milk, maple syrup, and egg to butter. Quickly beat egg into liquid mixture. Stir liquid into dry mixture and mix just until flour is wet.

  3. Spoon batter into muffin cups or tins, filling them about 3/4 full. Bake corn muffins for 15 minutes or until done. Serve hot with butter.
