Corn muffins are a quick and easy bread to make for dinner. This recipe for corn muffins is lightly sweetened with maple syrup, making the muffins a belly-warming treat in cooler weather. Recipe makes 8 corn muffins.

Ingredients:
- 3 tbsp butter, melted
- 3/4 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1-1/2 tsp. baking powder
- 1/4 tsp salt
- 1/3 cup milk
- 2 tbsp maple syrup
- 1 egg
Preparation:
- Preheat oven 425 degrees F.
- In small saucepan, melt butter over low heat. When butter is melted, remove saucepan from heat and let cool.
- In medium bowl, mix together the dry ingredients: flour, cornmeal, baking powder, and salt.
- Prepare muffin tins by lining tins with 8 paper muffin cups or greasing the pan.
- Returning to the saucepan with melted butter, add milk, maple syrup, and egg to butter. Quickly beat egg into liquid mixture.
- Stir liquid into dry mixture and mix just until flour is wet.
- Spoon batter into muffin cups or tins, filling them about 3/4 full.
- Bake corn muffins for 15 minutes or until done.
- Serve hot with butter.
