Pineapple Pumpkin Muffins

Looking for a muffin that can be eaten for breakfast, dessert, and as a tasty snack? Pineapple pumpkin muffins are sweet muffins made with canned pumpkin and sweet, dried pineapples.

Yield: 18 muffins

Prep Time: 08 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 cup canned pumpkin
  • 2 med. eggs
  • 2-1/2 cups all-purpose flour
  • 2-1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped dried pineapple

Preparation:

  1. Grease muffin tins. Preheat oven 350 degrees F.

  2. In medium bowl, cream sugar and shortening. Stir in pumpkin and eggs. In separate bowl, mix together the dry ingredients: flour, baking soda, and salt. Add dry ingredients to pumpkin mix. Quickly stir ingredients until flour is wet. Fold in pineapple.

  3. Fill muffin cups 2/3 full with batter. Bake at 350 degrees F for 20 to 25 minutes or until done. Remove muffins from tin and allow to cool.
