Pineapple Pumpkin Muffins

Looking for a muffin that can be eaten for breakfast, dessert, and as a tasty snack? Pineapple pumpkin muffins are sweet muffins made with canned pumpkin and sweet, dried pineapples. Recipe makes 18 muffins.
Prep Time: 08 minutes
Cook Time: 25 minutes
Ingredients:
  • 1 cup sugar
  • 1/2 cup shortening
  • 1 cup canned pumpkin
  • 2 eggs
  • 2-1/2 cups all-purpose flour
  • 2-1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped dried pineapple
Preparation:
  1. Grease muffin tins.

  2. Preheat oven 350 degrees F.

  3. In medium bowl, cream sugar and shortening.

  4. Stir in pumpkin and eggs.

  5. In separate bowl, mix together the dry ingredients: flour, baking soda, and salt.

  6. Add dry ingredients to pumpkin mix. Quickly stir ingredients until flour is wet.

  7. Fold in pineapple.

  8. Fill muffin cups 2/3 full with batter.

  9. Bake at 350 degrees F for 20 to 25 minutes or until done.

  10. Remove muffins from tin and allow to cool.
