Ingredients:
- 1 cup sugar
- 1/2 cup shortening
- 1 cup canned pumpkin
- 2 med. eggs
- 2-1/2 cups all-purpose flour
- 2-1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped dried pineapple
Preparation:
- Grease muffin tins. Preheat oven 350 degrees F.
- In medium bowl, cream sugar and shortening. Stir in pumpkin and eggs. In separate bowl, mix together the dry ingredients: flour, baking soda, and salt. Add dry ingredients to pumpkin mix. Quickly stir ingredients until flour is wet. Fold in pineapple.
- Fill muffin cups 2/3 full with batter. Bake at 350 degrees F for 20 to 25 minutes or until done. Remove muffins from tin and allow to cool.
