These easy baking soda biscuits are baked and served with butter and a favorite jam. They are a late summertime favorite because of all the homemade jams available at the farmers’ markets and localized grocery stores.
Yield: 1 dozen 2-1/2 inch biscuits

Ingredients:
- 2 cups sifted all-purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 4 Tbsp shortening
- 3/4 cup milk
- Serving butter or margarine
- Favorite jam
Preparation:
- Preheat oven 450 degrees F. In medium bowl, mix together flour, baking powder, and salt. Cut in shortening with fork. Add milk and briefly stir to make a soft dough. Turn dough out onto lightly floured board and knead lightly for about 10 seconds.
- Pat or roll dough out to 1/2 inch thickness. Use 2-1/2-inch or 2-inch biscuit cutter to cut 12 to 14 biscuits. Place biscuits on greased baking sheet. Bake at 450 degrees F for about 12 minutes or until lightly golden.
- Serve warm biscuits with butter and jam.
