Wholesome Whole Wheat Rolls

Looking for a great bread to serve at picnics or pack for lunches? Wholesome whole wheat rolls are shaped to grab and eat. The rolls taste great with butter or jam, and are a healthy alternative to white bread rolls.

Yield: 1 dozen rolls

Prep Time: 2 hours

Cook Time: 15 minutes

Total Time: 2 hours, 15 minutes

Ingredients:

  • 1/4 cup melted butter or margarine
  • 2 cups skim milk, room temperature
  • 1/4 cup toasted wheat germ
  • 1 tbsp molasses
  • 1-1/2 tsp salt
  • 2-1/4 tsp active dry yeast (1/4 oz. pkg)
  • 2 cups whole wheat flour
  • 2-1/2 cups bread flour, about

Preparation:

  1. In large bowl, mix together melted butter, milk, wheat germ, molasses, salt, and yeast. Stir until the yeast and salt are dissolved.

  2. Mix in whole wheat flour and enough bread flour to make a thick dough that can be kneaded. Turn dough out onto floured board and knead for 10 minutes, adding more bread flour, a tablespoon at a time, as needed.

  3. When the dough is smooth and elastic, put dough in greased bowl and turn dough over in the bowl so that the top is also lightly greased. Cover with clean kitchen towel and let rise for 1 hour in a warm, draft-free spot.

  4. Punch down dough. Turn dough out onto lightly floured board and knead out bubbles for 5 minutes. Divide dough into 12 pieces and shape into oblong rolls. Place rolls on greased baking sheets. Cover and let rise for about 30 minutes or until the dough has doubled in bulk.

  5. Bake rolls at 400 degrees F for 10 to 15 minutes, or until rolls feel firm when tapped on. Serve rolls warm or cold with butter or jam. These rolls can also be frozen and thawed when needed, and are great for adding to lunch bags.
