There are many ways to get a starter going. This flour and sugar mixture uses store bought active dry yeast to get the starter going. Prepare the starter 4 days before you want to make your sourdough bread.

Ingredients:
- 2-1/2 cups warm water
- 1-3/4 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp salt
- 1 tsp active dry yeast
Preparation:
- In large, non-metal bowl thoroughly mix together all of the ingredients.
- Keep mixture in large bowl or pour it into a large plastic container, such as the large plastic tubs that inexpensive ice cream comes in. Remember that the starter will expand and the container must be large enough to prevent spillover.
- Cover the bowl or plastic container with a clean kitchen towel, cheesecloth, or loosely set a lid on the container so that the yeast is allowed to breathe.
- Set the bowl in a generally warm place that is free from drafts. Let set for 4 days, stirring the mixture once each day.
- After 4 days, the starter is ready to use in your favorite sourdough recipe.
- After youve used a cup of your starter, replace what was used by adding 3/4 cup flour, 1-1/2 tsp sugar, and 1-1/2 cups warm water. Mix ingredients into your starter, cover, and let stand until your next baking day.
