This cinnamon-spiced treats tastes like your favorite apple pie in the form of an easy quick bread. The batter is filled with fall flavor thanks to a heaping of ground cinnamon and apple juice (or cider). Adding chopped peeled apples and chopped walnuts bring texture and interest to every bite. It is best to peel apples before adding them to baked goods like apple breads or cakes since small pieces of peel can be unpleasant to bite into. For added flavor, you can even toast the chopped walnuts before folding them into the batter. Toasting releases the natural oils in nuts and really brings out their flavors in a dish.

Ingredients

  • 1 1/2 cups all purpose flour

  • 1 3/4 teaspoons baking powder

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/4 cup firmly-packed brown sugar

  • 2 large eggs

  • 1/2 cup apple juice (or cider)

  • 1 teaspoon vanilla extract

  • 1 cup chopped and peeled apples (about 2 medium apples)

  • 1/2 cup coarsely chopped walnuts

  1. Gather the ingredients. Preheat oven to 350 F. Grease a 9 x 5-inch loaf pan and set aside.

  2. In a large bowl combine the flour, baking powder, cinnamon, and salt.

  3. In a separate large bowl cream together the butter, granulated sugar, and brown sugar until light and fluffy.

  4. Beat in the eggs, one at a time, until incorporated.

  5. Mix in the apple juice or apple cider and the vanilla extract.

  6. Gradually add the dry ingredients until just incorporated.

  7. Fold in the peeled chopped apple and the chopped walnuts.

  8. Pour into the prepared loaf pan. Bake for 45 to 55 minutes or until a skewer inserted in the center comes out clean.

  9. Remove from the oven and cool in the pan on a wire rack for 15 minutes. Remove from the pan and cool completely before slicing and serving.
